Celiac Disease is the inability to digest the gluten which is found in wheat, rye, barley or oats. This is not the same gluten in corn or rice.
When people with this disease eat foods with gluten, it damages the lining of the small intestine. Because this is where food is digested and absorbed, the body doesn't get any nutrients.
A strict, gluten-free diet is the only way to control this condition. Without the special diet, sufferers can develop anemia, bone problems, or even nerve damage.
