If you’re a vegetarian, you know as well as I do that it can sometimes be a bit difficult. Not everyone understands your decision and many, even if they respect your food choices, think that you eat raw carrots for breakfast and pickled beets for dessert. October is Vegetarian Awareness month, the perfect time to celebrate your vegetarianism and show your omnivorous friends how delicious it can be to go veg.

Even if you’re not a vegetarian or vegan, you can still explore the world of vegetables.

Plant-based diets aren’t as bland and boring as they may seem; when you’ve gotten tired of eating salad-and we all do!– you’ll find that there are amazingly varied recipes for all sorts of fruit, vegetable, grain, and legume preparations. Exotic hummus and baba ganoush can decorate your pita. Rice and beans will give your palate a taste of Latin America. Roasted veggie kabobs will tantalize your tastebuds. Or try a veggie burger. There’s an amazing variety of quality veggie burgers on the market today.
